I've had the occasion every now and then where 'people are conquering my territories that have more units than the attacking territory.

I cant find an example of it happening in the turns you mentioned.

For example, that first game in T4, what territory/order had a small stack kill a big stack?

Troops don't have access to quantum technology.
If they move from a territory, they don't defend it.
