I'm playing the single player games to learn and am at the second level with an expanding boss. I clear the board except for his single one left with 300 armies. How do I kill him?

Wear him down every turn, with the whole board you should have enough income to kill him in 6-7 turns

Focus on taking out the other AI's first, then focus on the boss. You should have a large income by then.
Do however attack the boss with 1 army from all sides you can. Since the boss cant split, he will move out as a single unit, leaving his current territory unguarded.
